Malai Soya or Malai soy chaap is a very popular north indian protein rich sweet gravy.
Ingredients:
- 1 cup Soybeans
- 1 cup Soya Chunks
- 1 cup whole wheat flour/ Soybean flour
- Salt to taste
- 1/2 cup Cashews
- 2 onions
- 1 spoon Cumin seeds
- 1 inch Ginger
- 2 tablespoon Oil
- 1 Green chilli
- 1 spoon Garam Masala
- 2 tablespoon Malai
- 2 spoon Kasuri Methi
- 2 spoon Sugar
- Salt to taste
- Coriander leaves for garnishing
Instructions:
- Soak the soybeans and soy chunks overnight
- Grind and make a fine paste.
- Add flour, salt and knead make a soft dough.
- Take a small ball from dough, stick the dough around the ice cream / popsicle sticks.
- Boil for 15 – 20 minutes or till soya cooks completely.
- now drain and transfer into cold water.
- drain off the soya chaap sticks and keep aside.
- In a deep pan add 1 spoon oil, cumin seed, ginger, chilli, kasuri methi, onion, sauté for 5-6 minutes.
- Add cashews and grind it make a fine paste.
- Add 1 spoon oil, pour the masala paste and saute on low flame till the masala turn aromatic.
- add in 1 cup of water and ¼ cup of malai.
- Cook for another 4-5 minutes. Add Garam masala.
- Now remove the popsicles stick and place the soya in the gravy.
- Add salt and sugar, cover the lid and cook for few more minutes.
- Serve with Roti.
Note: Soybean dough should be smooth and tight.
