Lavander blueberry pie is a flavourful aromatic dessert.
Ingrediants :
- Crust:
- 1/2 cup cashews powder
- 1/2 cup whole wheat flour
- Unsalted butter- 1/4 cup
- Cold water
- Baking powder- 1/2 tspoon
- Salt – Small pinch
- Maple syrup- 5 tablespoon
- Filling:
- Dried lavender- 1 tspoon
- Blue berry – 250gms
- White chocolate compound- 100gms
- Coconut milk – 400 gms
- Sweetener 6-7 tablespoon
- Wondergel 30 -1 tspoon
- Corn starch-1 teaspoon
Instruction:
- Pie crust:
- In a large deep bowl add all the dry ingredients. Now add cold unsalted butter and maple syrup. Mix all together(pea- size crumbs). Slowly drizzle in one tablespoon of ice water at a time and gently mix it in until the dough starts to come together. Turn the dough out onto a lightly floured surface and pack it into a ball.
- Roll the dough, transfer the dough to pie mould and bake it in a preheated oven 190°C for 15 minutes.
- Filling:
- In a deep pan (medium heat) add 1/2 cup water. Boil it and add dried lavender.
- Boil it for 3-4 minutes. Then add blueberries and sweetener. In a low frame cool for 5 minutes, slightly crush the berries.
- Now add coconut milk and chocolate cook for 4 -5 minutes.
- In a small bowl add wonder gel 30 and corn starch mix together and add bit water let it dissolve.
- Add this mixture to berry sauce. Cook for 3 to 4 minutes.
- Strain these mixture.
- Assembling :
- Pour the berry sauce on the pie crust. Let it set for 30 minutes.(room temperature)
- Then keep it in a fridge for 30 minutes. Decorated with fresh berries, edible flowers and coconut cream.
- Serve chilled.
