Levender blueberry Pie

Lavander blueberry pie is a flavourful aromatic dessert.

Ingrediants :

  • Crust:
  • 1/2 cup cashews powder
  • 1/2 cup whole wheat flour 
  • Unsalted butter- 1/4 cup
  • Cold water 
  • Baking powder- 1/2 tspoon
  • Salt – Small pinch
  • Maple syrup- 5 tablespoon
  • Filling:
  • Dried lavender- 1 tspoon 
  • Blue berry – 250gms
  • White chocolate compound- 100gms
  • Coconut milk – 400 gms
  • Sweetener 6-7 tablespoon 
  • Wondergel 30 -1 tspoon 
  • Corn starch-1 teaspoon 


  • Pie crust: 
  • In a large deep bowl add all the dry ingredients. Now add cold unsalted butter and maple syrup. Mix all together(pea- size crumbs). Slowly drizzle in one tablespoon of ice water at a time and gently mix it in until the dough starts to come together. Turn the dough out onto a lightly floured surface and pack it into a ball. 
  • Roll the dough, transfer the dough to pie mould and bake it  in a preheated oven 190°C for 15 minutes.
  • Filling:
  • In a deep pan (medium heat) add 1/2 cup water. Boil it and add dried lavender.
  • Boil it for 3-4 minutes. Then add blueberries and sweetener. In a low frame cool for 5 minutes, slightly crush the berries.
  • Now add coconut milk and chocolate cook for 4 -5 minutes.
  • In a small bowl add wonder gel 30 and corn starch mix together and add bit water let it dissolve.
  • Add this mixture to berry sauce. Cook for 3 to 4 minutes. 
  • Strain these mixture.
  • Assembling :
  • Pour the berry sauce on the pie crust. Let it set for 30 minutes.(room temperature)
  • Then keep it in a fridge for 30 minutes. Decorated with fresh berries, edible flowers and coconut cream.
  • Serve chilled.
